This past Thursday night, I was going to make something simple for dinner. I had even considered grabbing a rotisserie chicken from the store and calling it a night, but my son calls me and says, “Hey, can I have some friends over for dinner?” With the extra mouths to feed, a single chicken would not do the trick. So, I made Tacos on a Thursday. Here is how I brought them up a notch.
Yield = 18 Tacos
- 2 LBS Hamburger Meat Cooked and Drained
- ½ Cup Water
- 2 TBS Taco Seasoning
- 1 Can Ranch Style Beans
- 1 Cup Frozen Corn
- 18 Crunchy Taco Shells
- Shredded Cheese
- Sour Cream
Once you cook and drain the hamburger meat, add the water and the taco seasoning. Stir. Add the beans and the corn, stir, cover, and simmer on low heat while you put together a fixings tray (lettuce, cheese, tomato, sour cream, avocado). Preheat the oven to 170 degrees (warm) and place the shells on the rack to warm.
Put together the tacos and tada! You have a Taco Thursday that was taken up a notch.
