This marvelous meatloaf recipe was one I came up with for Sunday meals at the restaurant. My mom gave me a recipe years ago that was similar and used the same basic sweet sauce. But as you will discover as you follow me I am notorious for modifying everything. So here is another easy recipe that I have tweaked over the years (sorry mom).
Marvelous Meatloaf
Yield = 12 muffin size portions
Ingredients:
- 2 lbs. Hamburger Meat
- 1 egg
- 1 cup old fashioned oats (Quaker)
- 2 tsp. salt
- ½ tsp. black pepper
- 1 cup ketchup
- ½ cup brown sugar
- ¼ cup yellow mustard
Make the sweet sauce first by whisking the last three ingredients together.
Mix the first 5 ingredients and ⅓ cup of the sweet sauce together in a large mixing bowl. I always wash my hands really well and then dive right in. I mix the ingredients in a similar fashion as you would if you were kneading bread dough. Spray a 12 cup muffin tin with a little bit of cooking spray and form the meat mixture into 12 balls. Press the balls into the muffin tin. Bake in a 350-degree oven for 25 minutes or until the internal temperature of the meat reaches 160 degrees. When these are done I top them with the sweet sauce and serve them with some whipped potatoes (my secret to awesome whipped potatoes is heavy whipping cream instead of milk) and some green beans. My family loves this meal and it was always a sold-out special on Sundays at the restaurant. Another bonus is that the muffin size is perfect for freezable portions for my daughter to take back to her college dorm!
