Well, today I decided to raid the freezer to make dinner.  This is something my husband, Jim, used to challenge me to do.  Since we are finding it harder to get things from the store, and we aren’t really wanting to go out as often, I am starting to practice coming up with things to make that are a little out of the ordinary.  This is a recipe that proves that you can take some uncommon items and make a great meal. Once this Covid-19 thing has cleared up, I will definitely be making this recipe again!

Tomato Basil Tortellini

Yield = 6-8 Servings

Ingredients

In a large saucepan, brown the Italian sausage.  Once cooked remove from pan to drain on a paper towel.  Cook the tortellini following the directions on the package. In the same saucepan, melt the butter and stir in the flour to make a roux.  Add the tomato basil soup, the heavy whipping cream, garlic, and the salt. Mix well. Fold in the cooked tortellini. Serve with a veggie for a great meal.
