What do you do when you are in the middle of a global pandemic and start craving something sweet?  Normally, I would throw together some cookies or eat some ice cream, but with the current normal I really didn’t want to use up my supplies.  So, I decided to forage and see what I could invent. When I was a little girl, the moment I realized how much I loved to cook was when I created a concoction from peanut butter, butter, jelly, sugar, and some other stuff, and my brother and his friend ate every bit of it!  I loved that feeling. Here is my NEW recipe for something sweet.

Chocolate Coffee Muffins

Yield = Approx. 18 muffins

Ingredients:

Drizzle:

Preheat oven to 350 degrees.  In a mixing bowl, mix the cake mix, coffee, water, oil, eggs, banana, and oats (optional).  Fold in chocolate chips. Place mix into a prepared muffin pan and bake in the preheated oven for 15 minutes or until the center is bouncy but firm. Remove from oven and cool completely.  For the drizzle, mix the sugar, milk, and vanilla together in a small bowl with a whisk or fork. Drizzle over the top of the muffin.
