I watched a Hallmark movie last night! It was an awesome movie as always! It gave me an idea for a new recipe. In the movie, a chef used ice cream cones in the breading of fried chicken. What an awesome idea! I decided to create a new recipe using that idea. I must say, it turned out amazing! I added some honey mustard dipping sauce which made it even better than amazing!
Hallmark Ice Cream Fried Chicken Bites
Yield = 6 servings
Ingredients:
- 2 chicken breast
- 1 box of ice cream cones
- 4 eggs
- 1 cup of heavy whipping cream
- 2 tsp salt
- 2 tsp honey
- ½ cup flour
- Vegetable oil
Honey mustard dipping sauce:
Ingredients:
- ½ cup yellow mustard
- 2 TBS honey
- 2 TBS brown sugar
Directions:
Cut the chicken breast into bite-size cubes. In a medium mixing bowl whisk four eggs, 1 cup of heavy whipping cream, salt, and honey. Place the cubed chicken into the egg mixture. Stir to coat the chicken well. Using a food processor, process the box of ice cream cones into the consistency of Panko breadcrumbs. Using a Ziploc bag, mix the ice cream cones and the ½ cup of flour. Place the chicken into the Ziploc bag, and shake the bag to evenly coat the chicken pieces. Place vegetable oil in the bottom of a frying pan – approximately 1/4 inch deep. Heat the oil. Fry the chicken until crispy and golden brown on both sides. Note: do not get the oil too hot – the chicken will not cook evenly.
For the dipping sauce, simply mix the ingredients together. Taste the dipping sauce and add additional sugar or honey as needed.

How do keep the coating on the chicken pieces?
The egg mixture that you put the chicken in first will make the icecream cone and flour mixture stick to the chicken. Le tme know how it turns out 🙂
