I love banana nut bread, but I always view it as breakfast food instead of a dessert.  Well, that has changed with this banana nut cobbler.  I created this recipe after a little mental push from an Instagram friend and boy I don’t regret it.  It is sweet, moist, and absolutely delicious. Have a bowl of this with some vanilla ice cream and I promise you will never look at bananas and nuts the same again. 

For this recipe, I took into consideration that two of my kids have some food texture issues.  You know, when they eat strawberry yogurt but not strawberries or like banana nut bread but not bananas.  I took the bananas and cubed them into small pieces but if you don’t have any texture issues just slicing the bananas works fine.

Banana Nut Cobbler

Yield= 8-10 servings

Ingredients:

For Topping:

Pre-Heat the oven to 350 degrees.  Spray a 9×13 baking dish with non-stick spray.  In a mixing bowl, whisk the flour, sugar, cinnamon, and baking powder. Slowly mix in the milk and melted butter.  Pour into the baking dish.  Drop the banana pieces onto the top of the mixture.  In a different mixing bowl, combine the brown sugar, ¼ cup flour, pecans, and ¼ cup melted butter.  Spoon over the bananas.  Bake in the 350-degree oven for 30-35 minutes or until golden brown.  Serve with a whipped cream topping or vanilla ice cream.
