Easter time every year is a time for everyone to get together and celebrate beginnings. This year (2020) was a little different for us. With COVID-19 hanging around we decided to not get together. We did have a family zoom meeting and I made all the traditional foods for my children here at my house. This is my version of Aunt Missy’s homemade mac & cheese that she makes for my daughter every year.
PREP: 15 minutes | COOK: 20 Minutes | YIELD: 9×13 Baking Dish |
Ingredients:
- 1 bag elbow pasta (6-7 cups cooked)
- ½ lb. Velvetta cheese
- 1 cup grated colby jack cheese
- 1 cup grated swiss cheese
- 2 cups heavy whipping cream
- 1 tsp. Salt
- ½ cup panko style bread crumbs
- ½ cup grated cheese on top (optional)
- Pre-heat oven to 350 degrees
- Cook the pasta as directed on the package
- In a saucepan warm one cup of heavy cream
- Add the three kinds of cheese and stir to melt over medium heat
- Add the additional cup of cream and stir
- Add salt
- Remove from heat and stir in 6 cups of cooked pasta
- Spray a 9×13 baking dish with non-stick spray
- Pour the pasta and cheese mixture into the baking dish
- Top with the panko and grated cheese (optional)
- Bake in a 350-degree oven for 20 minutes
