Easter time every year is a time for everyone to get together and celebrate beginnings.  This year (2020) was a little different for us.  With COVID-19 hanging around we decided to not get together.  We did have a family zoom meeting and I made all the traditional foods for my children here at my house.  This is my version of Aunt Missy’s homemade mac & cheese that she makes for my daughter every year.  

PREP: 15 minutesCOOK: 20 MinutesYIELD: 9×13 Baking Dish

Ingredients:

  1. Pre-heat oven to 350 degrees
  2. Cook the pasta as directed on the package
  3. In a saucepan warm one cup of heavy cream
  4. Add the three kinds of cheese and stir to melt over medium heat
  5. Add the additional cup of cream and stir
  6. Add salt
  7. Remove from heat and stir in 6 cups of cooked pasta
  8. Spray a 9×13 baking dish with non-stick spray
  9. Pour the pasta and cheese mixture into the baking dish
  10. Top with the panko and grated cheese (optional)
  11. Bake in a 350-degree oven for 20 minutes
