Just recently my mom called me to tell me she had pneumonia! Scary, right? Well, after I made sure she was taking care of herself, my next thought was to make her some chicken noodle soup. So, I made up a pot full and took it to her. This is a simple recipe that is so good! When you are feeling a little down nothing soothes you like a nice warm bowl of chicken noodle soup!
Chicken Noodle Soup
Yield = 4 quarts
Ingredients:
- 4 quarts water
- 4-5 chicken breast (boiled)
- 2 stalks of celery
- ½ bag (1 cup chopped) baby carrots
- ½ chopped white onion
- ¾ TBS salt
- 2 tsp. pepper
- 1 box pasta
In a stockpot bring 4 quarts of waters and the chicken breast to a boil. While boiling, clean and chop the celery, baby carrots, and white onion. Add the chopped ingredients to the water along with the ¾ TBS salt and the 2 tsp black pepper. Boil until the chicken is done (internal temp of 160). Remove the chicken from the water. Open the box of pasta and add it to the boiling water. For longer noodles, I find that breaking them into smaller pieces is better in this soup. Cook pasta in boiling water for 10 minutes. While the pasta is cooking, cut up the chicken. Add the chicken back to the pot. Stir and taste for the desired saltiness. Serve with some crackers for the perfect feel better meal.
