The other night I got home late from a school event, and my family was starving! I had not planned, and I was in a big rush to get some dinner on the table. So – I went to one of my favorite 20-minute recipe which I call my Easy Cajun Parmesan Tilapia. It is so fast and easy to make! I was able to save the day, and I just might have kept my seventeen-year-old from starving. 🙂 

Cajun Parmesan Tilapia

Yield: Scalable for as many pieces as you want!

Ingredients:

Defrost the fillets in their packaging in warm water, open them, and pat them dry.

In a bowl, measure out the three ingredients for the number of fillets you are making and mix. Place the fillets on a baking sheet that is sprayed with cooking spray. Spread two TBS of the mixture on the fish. I use my blend, which I created when I owned my restaurant. If you don’t have any of my Simply Maurie Kay Cajun Seasoning, you can use an alternative one. Place the baking sheet in a 375-degree oven for 10-15 minutes or until the fish is fork-tender. For another create Cajun dish try my Aunt’s amazing Chicken Creole!
