When you have kids you are always looking for ways to feed them breakfast! I am very lucky that my husband gets up and makes breakfast on weekdays but he is always complaining about having limited breakfast options for our picky eaters. Well, this weekend, I decided to give him a break. I dug up one of my old restaurants Sunday brunch recipes. This from-scratch pancake recipe was originally meant to make about a hundred pancakes but with a little modification, it was a big hit with the family. I added the chocolate chips to make them extra special.
Chocolate Chip Scratch Pancakes
Yield = 15 pancakes
Ingredients:
- 3 cups sifted flour
- 1 tsp baking soda
- 2 tsp baking powder
- 1 ½ tsp salt
- ¼ cup granulated sugar
- 3 eggs
- 2 cups buttermilk
- ½ cup melted butter
- 1 ½ cups milk
- 1 cup of chocolate chips
In a small bowl mix the dry ingredients and set aside. In a large mixer bowl, mix eggs, buttermilk, melted butter, and milk. Stir in dry ingredients a little at a time. The mixture may be a little lumpy. You are looking for a batter consistency and can add a little more milk to achieve that if needed.
Heat a griddle to 350 degrees. Spray with cooking spray. Use a ¼ cup measuring cup to pour the mixture onto the griddle. Place some chocolate chips on the pancake after a few seconds. Wait until small bubbles form and then flip the pancake over. Continue to cook until a desired golden brown color. Serve with butter and syrup.
