Are you ready for a salad that will bring back memories of grandma?  Here is another of my favorite “dinner on the ground” selections.  This Watergate Salad is made with marshmallows and pineapple, always served cold, and when my mom wasn’t looking, took up half of my plate.  Grad a box of pistachio instant pudding mix the next time you are at the store and let the memories take you back.  

A little tidbit about this salad according to a Google search, “Kraft Foods debuted its bright green instant pistachio pudding mix in the 1970s and promoted a recipe using the pudding mix called Pistachio Pineapple Delight. It’s believed that a crafty editor at a Chicago newspaper reprinted the recipe but renamed it “Watergate Salad,” and the new name stuck.” 

All I know is that my mom gave me an ancient cookbook called “Sharing Recipes” from the Parent-Teacher Organization in Fred, Texas (my childhood hometown), and on page 8, there was this recipe for Watergate Salad.

Instructions:

Mix all ingredients together in a medium mixing bowl, chill for 2 hours, and serve.
