Sometimes I want to try something new. These Sweet and Sour Meatballs fit that bill perfectly. They are easy to make and not your normal meatball. Instead of serving these over pasta, you serve them over minute rice. The family thought they were great! I have made them several more times and have not been disappointed.

Ingredients

  • 3/4 pound Hamburger Meat

  • 1/2 cup panko

  • 1 egg

  • 1/4 teaspoon salt

  • 1/4 teaspoon ginger

  • 2 tablespoons soy sauce

  • 1 (8oz) can of pineapple chunks (drained-reserve juice)

  • 2 tablespoons vegetable oil

  • 1 cup thinly sliced carrots

  • 1/4 cup water chestnuts (drained)

  • 1 tablespoon vinegar

  • 2 tablespoons soy sauce

  • 1 tablespoon corn starch

  • 1 1/2 tablespoons sugar

  • Hot cooked rice

  • Cooked sweet peas

  • Sesame seeds (for garnish)

Directions

  • Combine the 3/4 pounds of hamburger meat with the 1/2 cup of panko, 1 egg, 1/4 teaspoon salt, 1/4 teaspoon ground ginger, and 2 tablespoons of soy sauce.
  • Mix well and form into 1 1/2 inch meatballs.
  • Place the 2 tablespoons of vegetable oil in a medium skillet and evenly brown the meatballs. Approximately 2 minutes on all sides.
  • Place the meatballs in an oven safe dish and put them in the oven at 350 degrees while you continue with the recipe.
  • In the skillet and the oil that the meatballs were browned, place the 1 cup of carrots, the pineapple chunks, and chopped water chestnuts. Cook until soft.
  • In a measuring cup, combine the pineapple juice, 1 tablespoon of vinegar, 2 tablespoons of soy sauce, 1 1/2 tablespoons of sugar, and 1 tablespoon of corn starch. Add water to the cup to make 1 cup of liquid.
  • Add the cornstarch mixture to the skillet and cook over medium heat until a smooth and thick sauce forms.
  • Place the meatballs into the skillet and stir them to coat them with the sauce.
  • Serve over cooked rice with some sweet peas mixed in. Garnish with sesame seeds.

This is definitely a great way to change things up a little bit. It is not really Chinese food, but not really Italian food either. It is just a fun dish for the family to enjoy. If you like this meal, check out some of my other favorites, like my sesame chicken.
