
I have three children, and they each have their own distinct personalities as well as their own favorite cookie. Raychel’s favorite is a chocolate chip oatmeal cookie. We have played with several different recipes over the years and have created our favorite rendition. Our cookie recipe is so versatile, I am sure you are going to love it! You can add so much to them to make them into your own favorite cookie! Raychel and I have dubbed this recipe title…

Raychel’s Ultimate Cookie
Yield: 30 Big Cookies
Ingredients:
- 1 ½ Stick of butter (softened)
- ¾ cup of brown sugar
- ½ cup of granulated sugar
- 2 eggs
- 1 tsp. Vanilla
- ¼ cup peanut butter
- 1 ½ cup all-purpose flour
- 1 tsp. Baking soda
- 1 tsp. Cinnamon
- ½ tsp. Salt
- 2 ½ cups old fashioned oats
- 2 cups, 3 cups or the whole bag of chocolate chips (-10 chips that Raychel ate)
- ½ cup pecans (optional)

If you would like to reduce the chocolate chips and make up the difference with multiple types of chips, they are delicious. I have done these with a mixture of white chocolate, peanut butter, chocolate, and caramel chips. This is truly a “make it what you like” ultimate cookie recipe.
Preheat oven to 350 degrees. You will need two bowls… the main bowl and a dry ingredient bowl. You take the butter, brown sugar, and granulated sugar, and you mix them together in the main bowl with a mixer until creamy. Then you add the eggs, vanilla, and peanut butter, and mix with the mixer in the main bowl. Combine the dry ingredients (flour, baking soda, cinnamon, and salt) in a separate bowl and then add those slowly to the main bowl while using the mixer. Once incorporated, use a spoon and fold in the oats, chips, and pecans(optional).
Spray a cookie sheet with cooking spray and place a heaping tablespoon of cookie dough 2 inches apart on the sheet. Bake in a preheated 350-degree oven for 10 minutes. Remove from the oven, let sit 2 minutes, then remove and put on a cooling rack.
